Try a camping toaster or a cast iron pan. I recently installed a solar generator onboard and could easily now use a household toaster. I’ve eliminated any propane use in the galley because of it.

When I was delivering boats, I simply used a griddle of some kind or cast iron pan and it came out fine.

I’m with Joe on this. As someone with Celiac disease, I can only eat gluten-free bread and that stuff is like masonry unless you heat it. Microwave, toast, whatever. So I have lots of practice and I prefer it cooked on my basic little 11" round cast iron griddle. Put it down on a pat of butter, swish it around, flip it when toasty and do the second side dry. Can’t be beat. It’s also a great way to heat a tortilla. (If you’ve only never eaten corn tortillas fried like this, you should try it.)
And then, when your toast is done you’ve already got a hot griddle for the eggs, if that’s your thing. Or, if you cook the tortilla, melt some cheddar cheese on it after flipping, put the cooked egg on top and some chili sauce (or salsa for the more sensitive taste buds) you’ve got a tasty huevos rancheros for breakfast.
This is making me hungry. I didn’t eat breakfast this morning. You guys are cruel…
Additional benefit to the griddle is that you can move it to the high side if your boat is a bit unbalanced.

I tried the frying pan this morning on an electric stove at home and it was a great success. Can’t wait to try it on the boat using Brian’s recipe.
